Banana bread was a staple in my house growing up. It’s one of those snacks that you feel is somewhat healthy, but still pairs perfectly with tea or coffee. It also helps to slather a slice in butter (I’ve also heard peanut butter is amazing on banana bread, though I’ve never tried it!) This was my first time trying this recipe and it turned out wonderfully. I found it more like a bread than a sweet treat, which is just what I hoped for. I also love banana bread for how well it freezes. I simply chop the loaf in half & put one half in the freezer and leave the other out!
2 cups whole wheat pastry flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
3 medium overripe bananas
1/3 cup honey
1/2 cup 1% milk
1/3 cup chopped walnuts
3 tbsp semi-sweet chocolate chips
Mix wet. Mix dry. Mix wet into dry. Fold in chunks. Pour into loaf pan. Bake at 350 for about 45 minutes*.
* I had to bake this for about 60 minutes total. My rule of thumb is that a knife inserted in the middle should come out clean (besides some melted chocolate, perhaps!)
