Hey pals! I am so excited to show you one of the best and easiest cupcake recipes I’ve ever tried. A few weeks ago at my real life & blogger friend Barb’s birthday party, I tried what looked like a regular chocolate cupcake brought by one of the guests. It was so delicious and had a nutty flavour I couldn’t put my finger on. It turned out my close friend Gillian made them, so I immediately emailed her for the recipe. Her response?
1 box Betty Crocker chocolate cake mix
15oz can pumpkin
Mix together (makes 12), and pop in the oven at 400 degrees for 20 minutes. Seriously.
And that’s it! They’re just as moist – actually, moreso – than when made with the oil, eggs, milk and whatever else the box recipe calls for. I won’t be naive and call them health food, but they are definitely a healthier cupcake option. YUM.
For the icing, I beat 1/2 cup butter and 8oz (one package) of cream cheese with an electric mixer for three minutes. Then I added about a teaspoon of vanilla, and added powdered sugar until the taste was right! I would say it was about 1 1/2 cups, but that’s just an estimate. Enjoy!
