Avocado Salad

I have to declare this the perfect side dish – if you like avocados, that is! I happen to be obsessed with them, so in my world, this salad is the perfect pair with all things barbecued! Make sure your avocados are a little firmer than you would buy to make guacamole – You don’t want them rock hard or super soft – somewhere in the middle works. This is the type of dish where you can really add anything according to your taste. In the one above, I added: three avocados, some green onion, the juice of half a lemon, one clove of garlic, salt & pepper and fresh herbs. If you make this, add a can of corn kernels (drained)! It adds lots of colour & taste, and the only reason that ingredient was omitted in the one above is because we didn’t have any on hand.

    Mmm, I had this at Kristin’s! But with corn & tomatoes! It was soooo good! I have been thinking about it ever since!
