Peanut Butter Cookies

One day earlier this week, as I walked home from work in some cold rain and wind, I decided I would be baking something as soon as I walked through the door. There’s something about warm cookies baking in the oven that makes the dread of the day melt away. This is my mom’s recipe, too, so that made it even sweeter.

Peanut Butter Cookies

1/2 cup shortening
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 cup peanut butter
1 and 1/4 cups flour
1/2 tsp salt
1/2 tsp baking soda

Cream shortening and sugars. Add egg and cream well. Add peanut butter, then add dry ingredients. Roll into balls and press top with fork. Bake at 350 for 12-15 minutes.
